The next panel refers to Viticulture, which is the art and science of cultivating grapevines. However, cultivating grapevines in Galicia can be particularly laborious due to several factors, such as the region's irregular topography, full of valleys and mountains, which necessitates the construction of retaining walls, water diversions, and irrigation canals; and the prevalence of smallholdings (i.e., the division of land into small plots).
The third factor affecting fieldwork is the high humidity, a consequence of the abundant annual rainfall, which causes many of the diseases described earlier.
All these factors determine the choice of planting systems used in the region and represented in the models. In contrast to the traditional or goblet-trained system, where work is carried out practically at ground level, in the Condado do Tea region, we opt for the trellis and pergola training systems. Both allow for greater aeration and ventilation of the plants and greater sunlight for the favorable ripening of the grapes.
